Recipe preparation process

Let the poppy seeds cool in the fridge (it grinds much better when cooled and does not stick to the walls). Put the cooled poppy seeds in a blender and grind finely. Let them rest for a while at room temperature (the poppy seed oil will soften and the dough will be easier to work with).

Add the milk and eggs (both must be at room temperature), flour, sugar, salt, rum and mix together in a blender. Let the dough rest for about 30-60 minutes at room temperature.

Stir the melted butter (but not hot) into the rested dough. Fry the pancakes on both sides in a buttered pan and stack them on top of each other.

Boil the port wine briefly and mix it with the jam to make a plum sauce. Put all the ingredients for the cream - cottage cheese and whipped cream (both chilled from the fridge), powdered sugar and cinnamon in a saucepan, mix and beat with a whisk until creamy. Spread the cream on the pancakes and serve with plum sauce.
